Days are for the books: walk to the glowing stations to order stock at the kitchen pass, hire at the bar, pin a theme to the corkboard, install gear at the crates, then open the doors. Nights are for the floor — work the stove and taps yourself, or run a finished order out to a table. Nothing lands like the boss doing it himself.
